So since a few months, hoppers behave not like vanilla minecraft hoppers anymore, they now only transfer 3 items of the same kind at the same time. This causes a lot of redstone problems.
I know this is probably done purposely to reduce lag on the server, but it takes away a lot of the fun in working with hoppers and redstone in general.

Would there be an option to put the transfer speed of hoppers back to the vanilla way?

That fixed one of our issues with lag.

If you were leading the server, would you sacrifice having a laggy experience to have "vanilla" redstone and hoppers?

Not only sorters but also semi-auto smelters, special casinos and such, I think there are ways to fix hopper lag without the reducing of the transfer speed, most lag is generated by hoppers that are uncovered and looking for an item to be picked up.
For that I would suggest slowing the "hopper-check" significantly. and reset the item transfer speed to the vanilla way. This does cause also problems but less so than the transfer speed.

I understand you want to keep the server less laggy, but because hoppers are behaving differently there is a need for bigger and bulkier Redstone to avoid using hoppers, and that again causes more lag.

I know the goal of the server is to keep the server as vanilla as possible, nonetheless I want to suggest this :

it's a plugin that will remove a lot of hoppers from the server (not fix the lag they generate, most hoppers used atm are for sorters (at grinders and storage rooms) when we can replace 3 hoppers (for sorting 1 item) and replace it by 1 hopper this could reduce the lag.

I have spoken to some of my dev friends and there is a way better performant spigot like that completely supports anything that exists today from the server and switching over will be very easy and fast.

PaperMC is a very big rewrite of spigot completely asynchronous (While spigot 1.13 is not, they actually dropped async for the most part), it will solve a ton of performance issues and increase server stability.

The discord provides excellent support and has good documentation and explanation for setting up and using PaperMC.

I can understand you are probably hesitant to switch to a whole new operating system for the server but please look into it and consider it.

It will fix load times, Improve performance, fix some normal spigot bugs,...
