I've noticed this happening with Horses on FlatGrass as well....Riding them like that inverts your avatar and screen sometimes too.

if it inverts your screen while riding a inverted horse use the shader option to invert it again and everything should appear normal. its the "super secret settings" button in the menu for those who dont know.
